Chef Austin Maki brings 15 years of culinary experience to Aurum Maui, a cooking philosophy
centered on seasonal ingredients and thoughtful technique and a collaborative leadership style
that emphasizes mentorship. As chef de cuisine, he leads the kitchen alongside our established
culinary team, bringing his own perspective to the menu while building on the restaurant’s
relationships with Hawaii farmers, fishermen and purveyors. His technique pairs familiar,
approachable dishes with careful preparation and full use of ingredients, reflecting respect for
the people and work behind the food.
